Badass Quinoa & Veggies: meal prep made easy!

Ingredients

cups
Quinoa
dry
1
green pepper
chopped
1
red pepper
chopped
1
yellow pepper
chopped
1
onion
chopped
1
cup
broccoli
chopped
1
package firm organic tofu
diced
1
can organic chickpeas
drained & rinsed
Instructions
Seasoning as desired (ground black pepper, garlic, onion powder, oregano, chili powder if you like it spicy)
Cook quinoa as directed (1.5 cups quinoa/3 cups water)
In a separate pan, sauté veggies & tofu, using veggie broth if needed to prevent sticking. Add seasoning to taste
When veggies are cooked through, remove from heat.
Place veggies over quinoa, add your favorite sauce, and serve!
