Badass Quinoa & Veggies: meal prep made easy!

Ingredients
  

  • 1.5 cups Quinoa dry
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 1 yellow pepper chopped
  • 1 onion chopped
  • 1 cup broccoli chopped
  • 1 package firm organic tofu diced
  • 1 can organic chickpeas drained & rinsed

Instructions
 

  • Seasoning as desired (ground black pepper, garlic, onion powder, oregano, chili powder if you like it spicy)
  • Cook quinoa as directed (1.5 cups quinoa/3 cups water)
  • In a separate pan, sauté veggies & tofu, using veggie broth if needed to prevent sticking. Add seasoning to taste
  • When veggies are cooked through, remove from heat.
  • Place veggies over quinoa, add your favorite sauce, and serve!
