Vegan Ground Beef Zucchini Crumble

Ingredients
  

  • 1 1/4 C chopped green pepper
  • 2 C beefless ground meat substitute of your choice
  • 2 C rice or whole grain of your choice
  • 4 C cut up zucchini
  • 3 C cut up ripe tomatoes
  • 1 1/2 T minced garlic or fresh if you're fancy!
  • 1 1/2 T minced onion or fresh!
  • 1 1/2 C water for cooking

Instructions
 

  • Cook green pepper with water, minced onion, and garlic.
  • Add in the beefless ground and zucchini until the zucchini is nearly finished cooking.
  • Add in the cooked rice and tomatoes and cook until the tomatoes soften a little.
  • Top with your favorite brand of vegan cheddar cheese and cover until it melts.
  • Serve and stuff in your face! Delicious and (mostly) healthy! :)

Notes

* You can also make this with quick-cook rice.
Add that as you're cooking the green peppers and spices.
Add the beefless ground when rice is nearly done.
