Cook green pepper with water, minced onion, and garlic.
Add in the beefless ground and zucchini until the zucchini is nearly finished cooking.
Add in the cooked rice and tomatoes and cook until the tomatoes soften a little.
Top with your favorite brand of vegan cheddar cheese and cover until it melts.
Serve and stuff in your face! Delicious and (mostly) healthy! :)
Notes
* You can also make this with quick-cook rice.
Add that as you're cooking the green peppers and spices.
Add the beefless ground when rice is nearly done.
