Tofu Cashew Mayo

Ingredients
  

  • 1 cup firm crumbled tofu
  • 1/4 cup raw cashews soaked
  • 1 tablespoon light miso
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Apple Cider Vinegar
  • water as needed.

Instructions
 

  • Blend all of the ingredients until very smooth, adding water as needed to allow the blades to move.
