VEGAN BANANA BREAD MUFFINS

Ingredients
  

  • 5 ripened banana’s
  • Juice of 1 lemon
  • 1/2 cup plant-based milk extra for brushing
  • 1/2 cup melted plant-based butter we make our own homemade oil-free butter
  • 1/2 cup agave nectar
  • 1/2 cup maple syrup extra for brushing
  • 2.5 cups all-purpose flour
  • 3 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp chopped pecans optional

Instructions
 

  • Preheat your oven to 350° Fahrenheit
  • Mash the bananas up in a bowl
  • Add all the remaining ingredients in a bowl and mix with a hand mixer for about a minute or mix with a fork or whisk
  • Put into a loaf pan, muffin pan, or bread pan (any pan you’d like to shape them as)
  • Cook for 20 minutes (while its in the oven, get your milk/syrup mix ready for brushing), and work on the compote recipe
  • Take it out of the oven after 20 minutes and brush with the milk/syrup mix and top with pecans, or any other nut of your choice, or no nuts.
  • Poke a little hole in the middle and squeeze some syrup in.
  • Place back in the oven for an additional 10-15 minutes.
  • Cool before serving or have it warm.
  • Drizzle compote over if you’d like or have it on the side, or the bread alone.
