Hearts of Palm Vegan Lobster Roll

Ingredients
  

  • 1 - 14 oz. can of hearts of palm rinsed and coarsely chopped
  • 1/4 cup red onion finely diced
  • 1/2 tsp tarragon
  • 1 tsp. kelp
  • 1 tsp. Old Bay seasoning
  • 1 tsp. dill fresh
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp. Dijon mustard
  • 1/4 cup vegan mayo
  • 1 stalk celery finely sliced
  • 1 tbsp. lemon juice
  • 1/2 tsp vegan Worcestershire sauce
  • 2 tsp. capers

Instructions
 

  • SEASON THE HEARTS OF PALMS with salt, pepper, kelp, onion powder, garlic powder, and Worcestershire.
  • MIX ALL REMAINING INGREDIENTS in a bowl and add hearts of palm.
  • ALLOW TO CHILL for 20 minutes.
  • STUFF SUB ROLL WITH Bibb lettuce, top with hearts of palm.
