Hearts of Palm Vegan Lobster Roll

- 1 - 14 oz. can of hearts of palm rinsed and coarsely chopped
- 1/4 cup red onion finely diced
- 1/2 tsp tarragon
- 1 tsp. kelp
- 1 tsp. Old Bay seasoning
- 1 tsp. dill fresh
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp. Dijon mustard
- 1/4 cup vegan mayo
- 1 stalk celery finely sliced
- 1 tbsp. lemon juice
- 1/2 tsp vegan Worcestershire sauce
- 2 tsp. capers
SEASON THE HEARTS OF PALMS with salt, pepper, kelp, onion powder, garlic powder, and Worcestershire.
MIX ALL REMAINING INGREDIENTS in a bowl and add hearts of palm.
ALLOW TO CHILL for 20 minutes.
STUFF SUB ROLL WITH Bibb lettuce, top with hearts of palm.
