VEGAN RIBS
Looking to impress your non-vegan friends with some "ribs" for lunch? This recipe will have anyone saying YUM! It is super easy to make and so delicious!

- 2 cans of young ripe jackfruit
- 12-16 oz Beyond Meat or Impossible Meat
- 1/4 C diced onion
- 1/8 C dark brown sugar
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp smoked paprika
- 2 tsp. liquid smoke
- 1 tsp black pepper
- ½ or more barbeque sauce I used Sweet Baby Rays
Preheat oven to 375. Drain and rinse jackfruit. Shred jackfruit with fingers in a bowl. Add all spices and Beyond Meat or Impossible Meat. Mix well. Put on a sheet lined with foil and spray with cooking spray. Shape into a “slab” of ribs shape, (or shape of your bun if you are making sandwiches).Bake for 55-60 minutes. Remove from oven. Cut into strips and cover with BBQ sauce. Bake again for 10-15 minutes.
