- 2 tsp apple cider vinegar
- 1 small tomato diced
- 1 yellow squash diced
- 4 green onions sliced
- 2 cups Napa cabbage sliced
- 1/2 cup corn
- 1/2 cup cooked quinoa
- 1/2 cup red beans rinsed (we used black beans)
- 1 tsp fresh oregano leaves chopped (we used 1 tbsp)
