Lentil Soup
Whether you are feeling under the weather, or just in the mood for a nutritious bowl of warm soup, this lentil soup will do just the trick.

- 3/4 C lentils
- 1.5 C water for lentils
- 3-4 potatoes cubed
- 1 bag of mirapoux or soup based frozen veggies
- 1 bag of carrots, cauliflower, broccoli frozen
- 1-2 Tbsp vegan Better Than Boullion broth paste
- 1/2-1 tsp Mrs. Dash
- 1/2-1 tsp garlic powder
- 1/2-1 tsp onion powder
- 5-6 C water
Add lentils and water to rice cooker. Let them cook. Cube potatoes and boil in separate pan until fully cooked. Put frozen veggies in microwave until fully thawed. Add bullion, garlic powder, onion powder to water and heat to boiling. Add lentils, strained, cooked potatoes and both bags of veggies to water. If a creamier consistency is desired remove about 3 cups of soup and blend in a blender. Mix blended mix back into soup! Enjoy! SO healthy, EASY and delicious!
