Tomato Basil Soup with Vegan Grilled Cheese

Tomato Basil Soup
- Fresh tomatoes
- 2-3 cans roasted tomatoes
- 1 yellow onion (chopped)
- fresh minced garlic
- olive oil
- fresh basil
- 1 lemon, juiced
Vegan Grilled Cheese
- Sourdough bread (sliced)
- Vegan cheese (CHAO Creamy Original)
- Vegan butter
Tomato Basil Soup
Combine olive oil, chopped onion, and minced garlic in a pot and sauté until softened
Then, add the roasted tomatoes and fresh tomatoes, and mix together
Bring to a boil, then lower heat.
Pour contents of pot into blender, add fresh basil and lemon juice, and blend all ingredients together
Serve with vegan grilled cheese
Vegan Grilled Cheese
Preheat skillet over medium heat
Butter 1 side of slice of bread, and place it butter-side down on the skillet
Add 1 slice of vegan cheese to bread
Butter a second slice of bread on 1 side, and place it butter-side up on top of sandwich
Grill until lightly browned and flip over; continue grilling until vegan cheese is melted
Serve with soup
