Pulse cauliflower florets in food processor into "rice"
Add vegan butter to small pan, add just egg. Once scrambled, set aside.
Add olive oil to large pan on medium high heat, add onion, garlic and ginger. Cook until onions soften 5-8 minutes
Stir in cauliflower rice
Add tamari and sesame oil, cook down for 2-3 minutes
Stir in kale, cook for another 2-3 minutes
Add carrots, corn, bean sprouts, raisins, scallions and just egg and continue to cook for another 5 minutes
Add salt and pepper to taste
Plate and enjoy!
