Arugula

Instructions
Defrost puff pastry completely
Caramelize Onions:
Quarter onions
Cook slowly in olive oil with salt and Herbs de Provence until sweet and caramelized
Prepare Tomatoes:
Slice tomatoes
Place on paper towels
Salt and let drain for 30 minutes
Prepare Crust:
Join two pieces of puff pastry
Fold edges to create a border
Place on floured baking sheet
Assembly:
Brush pastry with Dijon mustard
Spread caramelized onions as first layer
Layer sliced tomatoes, overlapping slightly
Drizzle with olive oil
Season with salt and pepper
Sprinkle with fresh rosemary
Bake at 400°F for 35-40 minutes until pastry is golden
Top with:
Fresh herbs
Arugula
Pine nuts
Light olive oil drizzle
