Ingredients
5plum tomatoes sliced in half
2red bell peppers sliced
1/2red onion chopped
1/2red onion sliced
6clovesof garlic peeled
15ozcan of tomato sauce
1tablespoonmushroom powderwith salt or vegetable broth seasoning
1tspcurry powder
1/2cupvegetable oil
1cupplant-based meat I used fried soy nuggets from Whole Foods Deli
1cupof spinach tightly packed
Long grain parboiled white rice and fried plantains for serving
Instructions
Blend sliced tomatoes, tomato sauce, 1/2 red onion sliced, garlic, bell peppers until chunky.
Heat up 1/2 cup oil frying temperature in a stock pot add chopped red onion as soon as it starts to brown add in the sauce mixture. It should be bubbling. Stir until combined for 5mins. Turn down the heat to low put on a lid slightly vented and cook for 20 mins. Add meat substitute and spinach and cook for additional 5 mins.
Serve on top of white rice with side of fried plantains with a sprinkle of garlic salt.
