Instructions
Step 1: Cook lima beans with epazote for two hours
Step 2: Allow to cool
Step 3: Dice chives and mix with the bean epazote mixture.
Step 4: Roast pumpkin seeds and blend to powder in food processor
Step 5: Add powdered pumpkin seeds to bean mixture
Step 6: Set mixture aside and allow it to cool
Step 7: Combine corn masa, water, oil, and salt into a dough
Step 8: Roll dough into a ball and flatten out into a shape of a circle
Step 9: Place bean mixture into the middle of the dough ball mixture making a puck shape - enclosing the bean mixture in the dough.
Step 10: Lightly fry for 5 - 7 minutes.
