IMMUNITY-BOOSTING VEGGIE SOUP

Ingredients
  

  • 4 cups vegetable broth
  • 1/3 cup white rice or brown
  • 3 large carrots peeled and chopped
  • 1 large crown broccoli chopped
  • 1/2 red or yellow bell pepper chopped
  • 1 medium zucchini
  • 1 cup coconut milk (optional)
  • 3 Gloves garlic minced
  • 1 2-inch ginger peeled and grated
  • 1 tsp ground turmeric
  • 2 Tbsp lime juice
  • 2 Tbsp Miso
  • handful chopped Parsley Optional

Instructions
 

  • Add Veggie Broth, Turmeric, Ginger, and Garlic in a pot, bring to a boil. Cook at a gentle boil for 10 minutes before adding the remaining ingredients to the pot and cook for additional 15-20 minutes, Top with chopped Parsley and Lime juice.

Notes

Notes: any veggies are perfectly fine to substitute for this recipe.
