She is 70 Years Old And Never Felt Better!

At 70, Elizabeth Mansur is living proof that being passionate about a healthy whole food plant-based lifestyle pays off, no matter what age you start! Her journey as a vegetarian started years ago.  She was primed and ready when the whole food plant-based movement took hold during the past decade. Elizabeth loves her activities…tennis, yoga, and hikes in San Diego’s many trails keep her fit and flexible. 

Her passion for healthy living led her to explore ideas around whole food plant-based cooking, and she decided to take a vegan cooking course at Rouexbe culinary school in 2017. Elizabeth believes the heart of the home is in the kitchen and that’s where her Lunch & Learn class was born. She hosted an intimate group of 6-8 guests in her eat-in kitchen for a delicious and fun plant-based cooking experience.

Along Elizabeth’s journey through volunteering, she had the honor to learn from the American Cancer Society Gerson Institute and the Chopra Center for Wellbeing. She was then able to parlay her knowledge and experience into her newfound San Diego vegan community where she created her own following with the goal to expand awareness beyond the immediate vegan community to both veg-curious and the restaurateurs catering to their emerging plant-based demand. One of her proudest accomplishments is repeatedly entering unknown territory by taking her meet-up followers to non-vegan restaurants as a demonstration to the restaurants on how to meet the demand of a growing plant-based society!

She hopes with her demo today that she is able to inspire viewers to adopt a plant-based whole food lifestyle.

Warm Veggie Soup, Netflix, And Chill

This is the perfect soothing meal for those winter Netflix and chill nights.  Curl up with a blanket, some good TV, and your immune-boosting soup and you are ready to go.  The coconut milk gives the base a yummy creaminess, and the turmeric gives it that beautiful golden color.  She uses an array of healthy veggies such as carrots, broccoli, and zucchini…but you can use whatever veggies you prefer.  The options are endless.  The turmeric, ginger, and garlic are what give this veggie soup recipe its powerful immune-boosting status, because of their antioxidant properties.  So sit down and joy, this is one big bowl of perfection.

*If you’re looking to give your immune system a boost during cold and flu season, this is the perfect nourishing immunity-boosting soup for you! It’s packed with vegetables and includes turmeric for a multi-vitamin antioxidant infusion. Plus, it has the most delightful flavor! Turmeric, ginger, and garlic contain powerful antioxidants and are natural anti-inflammatories. Between the turmeric, ginger, garlic, lime juice, and vegetables, you’re getting vitamin and antioxidant infusion, giving your natural immunity a kick.
Course Soups & Stews


  • 4 cups vegetable broth
  • 1/3 cup white rice or brown
  • 3 large carrots peeled and chopped
  • 1 large crown broccoli chopped
  • 1/2 red or yellow bell pepper chopped
  • 1 medium zucchini
  • 1 cup coconut milk (optional)
  • 3 Gloves garlic minced
  • 1 2-inch ginger peeled and grated
  • 1 tsp ground turmeric
  • 2 Tbsp lime juice
  • 2 Tbsp Miso
  • handful chopped Parsley Optional


  • Add Veggie Broth, Turmeric, Ginger, and Garlic in a pot, bring to a boil. Cook at a gentle boil for 10 minutes before adding the remaining ingredients to the pot and cook for additional 15-20 minutes, Top with chopped Parsley and Lime juice.


Notes: any veggies are perfectly fine to substitute for this recipe.
