Scrumptious Chickpea Salad with Tangy Orange Miso Dressing

Ingredients
SALAD:
1/2Cdry quinoa
1Cwater
12cherry tomatoeshalved
4Spring onionssliced
1 1/2Csalt-free chickpeascooked, or canned and rinsed
3Tblsfresh coriander
DRESSING:
Juice of 1 orange
1/4Crice vinegar
2tspwhite or yellow miso
1Tblsmaple syrup
1clovegarlicminced
1tspgingergrated
2tspblack sesame seeds
Instructions
Place 1/2 C quinoa and 1 C water in saucepan and bring to a boil. Reduce to simmer, cover and cook until water is absorbed and quinoa is tender (abt. 15 min). You will know that the quinoa when all the grains from white to transparent, and the spiral-like germ has separated. Wait for it to cool to add to recipe.
Combine tomatoes, onions, quinoa, chickpeas and fresh coriander in a large bowl.
Mix all dressing ingredients together in a small bowl. Pour the dressing into the larger bowl and toss all of the salad ingredients around. Serve and enjoy!
