Tofu Cashew Mayo

Ingredients

firm
crumbled tofu
1/4
cup
raw cashews
soaked

tablespoon
light miso
1
tablespoon
Dijon Mustard
1
tablespoon
Apple Cider Vinegar
water as needed.
Instructions
Blend all of the ingredients until very smooth, adding water as needed to allow the blades to move.
