Vegan Tostada

Ingredients
*beans or lentils of your choice
we used brown lentils, red kidney beans, garbanzo beans
*quinoa
*avocado
*salsa
*iceberg lettuce
*arugula
*tomatoes
*radishes
we used watermelon radishes
*green onions
*picked red onions
*pickled red cabbage
*pomegranate
*pistachio
*jalapeño
*balsamic glaze
*hot sauce
All the above is optional for building your own tostadas
Instructions
1.) Heat up your lentils/beans on the stovetop (we added a little veggie broth to the beans while heating them).
2.) Heat up your tostada shells (air fryer - 370 degrees for 4-5 minutes) or (oven 375 for 3-5 minutes)
3.) Chop up all the toppings
4.) Mashup your beans/lentils (we mashed up the lentils but kept the kidney beans and garbanzo beans whole & added them as part of the toppings).
5.) Build your tostada (beans/lentils, then mashed avocado, quinoa, and any other topping you’d like).
6.) Enjoy!
