TOMATO TORNADO SOUP
This is a simple and delicious kid-friendly recipe for fresh vegan tomato soup. There are only a few ingredients, yet it bursts with creaminess and flavor!

- 4 to 6 giant tomatoes chopped in big chunks
- 1 onion chopped in big chunks
- 2 Rapunzel Vegetable Bouillon Cubes with Herbs or Sea Salt
- oil for cooking
- nutritional yeast optional
- Spices to taste ex: Sea salt, Oregano, Basil
- vegan cream cheese optional
Put all ingredients in a big pot of saucepan with some oil.
Stir to cook evenly.
Turn heat to low and simmer and allow the ingredients to soften (about 10 minutes)
Once cooked, remove from heat and let cool.
Once the soup is cool, pour it into a blender and blend until smooth, adding al little water if it’s too thick.
Reheat in a pot.
Top it off with a little extra fresh basil, nutritional yeast, and vegan cheese to make the flavor pop!
