Why This Is the Perfect Soup Recipe for Kids!

This Soup Recipe for Kids is Fun and Easy to Make!

Acclaimed author and artist Ruby Roth joins UnchainedTV to make a  fast and furious kid-friendly recipe for tomato soup! This dish is from one of Ruby’s many children’s books, the Help Yourself Cookbook for Kids! Ruby has done numerous children’s books, both writing and illustrating them all! These were the first books of their kind (vegan, non-fiction) in children’s literature!  We were lucky enough to have her on to demonstrate for us how simple it is to make healthy vegan recipes that even the little ones can whip up in the kitchen, with their parent’s help.  With soup, kids are getting lots of veggie nutrients without even realizing it. It’s a great way to get around the “I don’t want to eat my veggies” syndrome that can be frustrating for parents trying to feed their kids the healthiest diet possible. The written recipe is below. But, let’s watch how it’s done…

 

 

Who is Ruby Roth?

Ruby has been vegan for about 17 years!  She has always been a social justice activist, but when she watched the eye-opening documentary Earthlings, Ruby realized her values didn’t align with her eating habits.  So, she decided to become vegan, and she has never looked back. Today, one way Ruby expresses her activism is through her art and her children’s books about veganism. A couple of her books you may recognize are: Vegan Is Love and V is for Vegan: The ABC’s of Being Kind, and That’s Why We Don’t Eat Animals.

Kid-Friendly Recipes are Readily Available, and This One Is Delicious!

Ruby is making us a “Tomato Tornado” soup.  This recipe is simple to make, with only a few ingredients, many of which you probably already have at home. You can make this recipe in as little as 10 minutes.  It is so simple!  Just chop up your onions and heirloom tomatoes into big junks, and sauté them in a little oil to soften them up.  Add some of your favorite spices, or use Ruby’s go-to mix of Oregano, sea salt, and fresh basil.  Once all the ingredients are softened, remove them from the heat and let cool.  Then throw it all in a blender and blend to your desired consistency. Some like it thin, some like it thick…it’s your choice.  Pour the finished soup into a bowl, top with fresh basil and a dollop of vegan creamed cheese and you are ready to serve and enjoy!

TOMATO TORNADO  SOUP

This is a simple and delicious kid-friendly recipe for fresh vegan tomato soup. There are only a few ingredients, yet it bursts with creaminess and flavor!
Course Soup
Cuisine American

Ingredients
  

  • 4 to 6 giant tomatoes chopped in big chunks
  • 1 onion chopped in big chunks
  • 2 Rapunzel Vegetable Bouillon Cubes with Herbs or Sea Salt
  • oil for cooking
  • nutritional yeast optional
  • Spices to taste ex: Sea salt, Oregano, Basil
  • vegan cream cheese optional

Instructions
 

  • Put all ingredients in a big pot of saucepan with some oil.
  • Stir to cook evenly.
  • Turn heat to low and simmer and allow the ingredients to soften (about 10 minutes)
  • Once cooked, remove from heat and let cool.
  • Once the soup is cool, pour it into a blender and blend until smooth, adding al little water if it’s too thick.
  • Reheat in a pot.
  • Top it off with a little extra fresh basil, nutritional yeast, and vegan cheese to make the flavor pop!
