Celebrating being vegan for 7 years, Paige Parsons Roache has been committed to bringing ECO-VEGANISM to the forefront of every interaction: Environmentally conscious vegan living. After watching the documentary COWSPIRACY, she went vegan on the spot. Her daughter Katelyn, 13 at the time, chose veganism for the animals 6 months earlier. Paige, on the other hand, after being shocked by the environmental impact of eating meat and dairy, chose to go vegan “for the environment.” Soon after, she attended her first pig vigil with LA Animal Save/Animal Save Movement. Once she looked those baby pigs in the eyes, she knew why her daughter had gone vegan. Cooking as a guest chef on LunchBreakLIVE after meeting Jane Velez-Mitchell at VegFestLA, and inspired by Jane’s bold courage, Paige became a Contributor for UnChainedTV. Let Your Walnut Tacos Shine!
The great thing about this Walnut Taco recipe is that it only takes about ten minutes to make, and it’s easy to prepare large batches if needed. Walnuts are known to be a great “meat alternative” for tacos, because of the consistency you get when they are pulsed and combined with other ingredients. The texture is perfect! Top your tacos with the included homemade creamy cashew cheese sauce and prepare for perfection in every bite. A sure way to get your guests to come back for more.
Walnut Taco Lettuce Wraps
- The walnut mix:
- 1 Cup walnuts
- 1 carrot
- 1 celery stalk
- dash of each of these: cumin, turmeric, pepper, salt and cinnamon.
- 1/2 a lemon juiced
- The cheesy sauce:
- 1 C cashews
- 1 Tbls apple cider vinegar
- 1/2 a lemon juiced
- 1 garlic clove
- Dash of turmeric, pepper, salt, onion powder
- 1/2 C water
- WALNUT MEAT: In a food processor or blender add all the walnut mix ingredients and pulse for about 1 minute. Check to make sure it is a thick/chunky consistency. Add more spices as desired and pulse until ready.
- CHEESE SAUCE: Blend all the ingredients for the sauce until creamy.
- ASSEMBLE: Add the walnut “meat” atop lettuce leaves of your choice, pour the cheese sauce on top.
