Prepare noodles by washing and spiralizing zucchini.
To prepare the sauce, place the coconut milk, soaked cashews, zucchini, basil and seasonings in a highspeed blender. Blend on high until creamy and smooth. Taste and adjust seasonings accordingly.
Slice the shiitake mushrooms, chop the walnuts, and prepare the other ingredients.
To assemble, toss everything together in a large bowl. Coat well with the sauce. Top with additional walnuts and basil.
