Basil Crunch Spaghetti

Ingredients
  

  • 5 oz Shiitake Mushrooms
  • ¼ cup Follow Your Heart Parmesan cheese
  • 1 ½ cups raw walnuts chopped
  • 1 large zucchini diced
  • 1 teaspoon Italian seasoning
  • 1 cup fresh basil

For the sauce

  • 1 can coconut milk
  • 2 cups raw cashews soaked.
  • 1 zucchini
  • 2 cups fresh basil
  • 2 tablespoons Italian seasoning
  • 1 tablespoon garlic powder
  • Braggs liquid aminos to taste
  • Spiralized Zucchini Noodles

Instructions
 

  • Prepare noodles by washing and spiralizing zucchini.
  • To prepare the sauce, place the coconut milk, soaked cashews, zucchini, basil and seasonings in a highspeed blender. Blend on high until creamy and smooth. Taste and adjust seasonings accordingly.
  • Slice the shiitake mushrooms, chop the walnuts, and prepare the other ingredients.
  • To assemble, toss everything together in a large bowl. Coat well with the sauce. Top with additional walnuts and basil.
