Tofu Egg Salad with Black Salt
Ingredients
- 1 block extra firm tofu high protein is the best for this
- ½ cup vegan mayonnaise
- ¾ teaspoon black salt
- 1 teaspoon garlic powder
- 1/8 teaspoon turmeric
- Fresh ground pepper and salt to taste
- 3 stalks celery cleaned and finely diced
- 1/3 cup red onion finely diced
- Fresh dill to taste
- Sandwich bread crackers, or mixed greens
Instructions
- Remove any excess moisture from the block of tofu by pressing it in a tofu press or simply wringing it in some clean dish towels. Using the largest holes on a box grater, shred the tofu into bits and add it to a large bowl.
- In a small measuring cup, mix together the mayo and additional seasonings. Set aside.
- Finely dice the celery and red onion. Add the to the tofu, along with the mayo mixture and mix well to combine. Add fresh dill to taste, along with salt and pepper.
- Served chilled with bread, crackers or on top of mixed greens.
