½cupvegan mayonnaise
¾teaspoonblack salt
1teaspoongarlic powder
1/8teaspoonturmeric
Fresh ground pepper and salt to taste
3stalks celerycleaned and finely diced
1/3cupred onionfinely diced
Fresh dill to taste
Sandwich breadcrackers, or mixed greens
Instructions
Remove any excess moisture from the block of tofu by pressing it in a tofu press or simply wringing it in some clean dish towels. Using the largest holes on a box grater, shred the tofu into bits and add it to a large bowl.
In a small measuring cup, mix together the mayo and additional seasonings. Set aside.
Finely dice the celery and red onion. Add the to the tofu, along with the mayo mixture and mix well to combine. Add fresh dill to taste, along with salt and pepper.
Served chilled with bread, crackers or on top of mixed greens.
