This Frozen Mango Blueberry Sundae Bowl Tastes Like Dessert
Share This
Who says dessert can’t be colorful, refreshing, and made from healthy plant-based ingredients? In the Challenge the Host segment of New Day New Chef, Jane Velez-Mitchell whips up a Frozen Mango Blueberry Sundae Bowl that looks like an indulgent ice cream treat but starts with frozen fruit and a blender.
With its vibrant purple color, naturally sweet flavor, and fun toppings, this recipe proves that healthy desserts don’t have to feel like a compromise. Frozen mango and blueberries create a thick, creamy base, while bananas, strawberries, muesli, raisins, and chocolate add texture and flavor in every bite.
A Sundae Bowl Without the Ice Cream
This recipe borrows everything people love about a classic sundae- the creamy texture, colorful toppings, and satisfying sweetness- but replaces traditional ice cream with blended fruit. Frozen mango adds natural sweetness and a smooth consistency, while blueberries contribute their beautiful color and bright berry flavor.
A splash of soy milk helps everything blend together, while maple syrup and vanilla-flavored stevia add just enough sweetness to make the bowl feel like a special treat. The result is thick enough to eat with a spoon and satisfying enough to serve as either a snack, breakfast, or dessert.
The Fun Is in the Toppings
One of the best things about this sundae bowl is how customizable it can be. Jane tops her creation with sliced bananas, strawberries, muesli, raisins, and chopped chocolate, creating a combination of creamy, crunchy, chewy, and sweet textures.
The fresh fruit adds brightness and color, while the muesli provides crunch and a little extra heartiness. Raisins bring bursts of natural sweetness, and the chocolate takes the bowl from smoothie territory into true sundae territory.
It’s a recipe that looks impressive but comes together in just minutes, making it perfect for busy mornings, afternoon snacks, or those moments when you’re craving something sweet but still want to keep things plant-based.
Frozen Fruit Makes All the Difference
The secret to achieving the perfect sundae bowl texture is using frozen fruit. Unlike smoothies that are meant to be sipped, this recipe is blended with just enough soy milk to keep it thick and spoonable. The frozen mango and blueberries create a rich, creamy consistency that feels remarkably similar to soft-serve dessert.
Because the fruit is naturally sweet, you can easily adjust the amount of maple syrup or stevia to suit your taste. Some people may prefer a sweeter bowl, while others may enjoy letting the fruit flavors shine on their own.
A Sweet Ending to a Flavor-Packed Episode
Jane creates this Frozen Mango Blueberry Sundae Bowl during the same episode that features Chef Wali from BeeWali’s Vegan AF. In the featured recipe, Chef Wali prepares his crowd-pleasing Vegan Chicken Curry Pasta Salad, combining plant-based chicken, pasta, colorful bell peppers, cilantro, and a creamy curry dressing.
Together, the recipes showcase two very different sides of plant-based cooking. Chef Wali delivers bold savory comfort food, while Jane finishes things off with a colorful frozen dessert that’s as beautiful as it is delicious.
