Cool Vegan Cashew & Cranberry “Tuna” Salad Wraps with Avocado

can chickpeas

avocado (peeled, seeded, and cubed)
Fresh lime juice

vegan mayo

cup
(or more) cashews

celery stalks (diced)
1/2
small cucumber (diced)
1/4
cup
purple cabbage (chopped)
1/4
cup
cilantro (chopped)
1/2
cup
dried cranberries (or other dried fruit such as raisins)
1/2
tsp
cumin
Pinch of salt
Pepper to taste
Flour tortillas or other wrap (even lettuce)
Instructions
Prep the avocado and squeeze lime juice all over it
Drain and mash the chickpeas with a fork
Mix everything up in a big bowl
Season to taste
Eat with flour tortilla wraps or lettuce cups/ wraps
