Cool Vegan Cashew & Cranberry “Tuna” Salad Wraps with Avocado

Ingredients
  

  • 15 oz can chickpeas
  • 1 avocado (peeled, seeded, and cubed)
  • Fresh lime juice
  • 1/3 cup vegan mayo
  • 1/4 cup (or more) cashews
  • 2 celery stalks (diced)
  • 1/2 small cucumber (diced)
  • 1/4 cup purple cabbage (chopped)
  • 1/4 cup cilantro (chopped)
  • 1/2 cup dried cranberries (or other dried fruit such as raisins)
  • 1/2 tsp cumin
  • Pinch of salt
  • Pepper to taste
  • Flour tortillas or other wrap (even lettuce)

Instructions
 

  • Prep the avocado and squeeze lime juice all over it
  • Drain and mash the chickpeas with a fork
  • Mix everything up in a big bowl
  • Season to taste
  • Eat with flour tortilla wraps or lettuce cups/ wraps
