This Salvadoran dish is super simple to make, very filling, and healthy!

Ingredients
2squash/zucchini chopped/cut the ends off
1/2onion julienne or chopped
1 1/2-2tomatoes
1cube of "Not Chick'n" bouillon
Salt & black pepper to taste
Oil to slightly sauté or water if wanting it healthier
1/2 -1cupof water to boil everything
Instructions
In a medium sized pan, sauté onions & tomatoes for about 1-2 minutes & add "Not Chick'n" bouillon cube. Add cut up zucchini/squash. Season to taste with salt & pepper. Add water and cover. Medium to low heat for about 15 minutes or until zucchini is done.
Enjoy over rice or you can even add vegan cheese on top. Enjoy!
