Vegan Mac and Cheese (Healthy Version)

Instructions
Cook noodles of your choice according to the package.
Chop carrots, onion, potato, and peel garlic to put into a large pot of salted water.
Bring water to boil and remove vegetables when carrot/potatoes become fork tender. Save a cup of the water to blend.
Add vegetables and the saved water to a blender with seasonings and blend until smooth.
Mix "cheese" with noodles and serve OR add to a baking dish to bake for 15-20 minutes. Feel free to add breadcrumbs on top!
