RECIPE: Light and Lucious Lunch on July 4th

Fruit Salad (serves 2)

Ingredients

• juice from 1 fresh squeezed lemon
• pink Himalayan sea salt, to taste
• 1 c seedless watermelon
• 1 c sliced strawberries
• 1 c cantaloupe
• 1/2 c blackberries

Greens and Tempeh Salad (serves 2)

Ingredients

• 3 c organic baby spinach
• tempeh (browned in an air fryer)
• 10 cherry tomatoes
• 1 hot house cucumber, cubed
• 1 Tbsp sunflower seeds
• 1 Tbsp pumpkin seeds
• 1/2 c chopped baby carrots
• 1/4  dried cranberries

Dressing
Fat Free Balsamic Vinaigrette (Maple Grove Farms of Vermont) (available at Ralphs or Kroger)
Vegan Bleu Cheese (Follow Your Heart)
