Pura Vita’s Panzanella Salad (S+F)
Ingredients
Salad
- 2 cups Organic Cherry or Grape Tomatoes
- ¼ cup Basil
- ¼ cup Red Onion
- 2 cups Toasted Baguette or Ciabatta
Red Wine Vinaigrette
- ½ cup Organic Red Wine Vinegar
- 2 tsp Organic Dijon Mustard
- 2 Large Garlic Cloves
- ½ tsp Sea Salt
- ½ tsp Black Pepper
- 1 cup Organic Extra Virgin Olive Oil
Instructions
- Combine tomatoes, toasted bread, basil, and onion in a large bowl.
- To made vinaigrette, mix all ingredients (except the olive oil) in the blender.
- While the blender is running on low, slowly pour olive oil into mix to emulsify.
- Pour vinaigrette over salad mixture and mix.
- Let the salad sit for at least 15-20 minutes before eating. (The bread should have time to soak up all the dressing.)
- Serve
