Jenners Chipotle Mushroom Tostadas
Ingredients
For Tostadas:
- Corn tortillas
- Olive oil for frying
- 1 shallot diced
- 1 carton baby bella mushrooms sliced
- Field Roast Chipotle sausages
- Frozen corn
- Black beans prepared or canned
Toppings:
- Vegan cheese
- Fresh cilantro
- Avocado
- Vegan sour cream
- Lettuce
- Tomatoes
Forthe Beans:
- 2 cups dried black beans
- 1 whole onion quartered
- 5 garlic cloves
- Water to cover
- Salt to taste
Instructions
Prepare Beans (The Day Before)
- Soak beans overnight in water
- Drain and rinse
- Cook with onion and garlic for about 2 hours
- Season with salt
- Purรฉe when ready to use
Prepare Filling:
- Sautรฉ diced shallot
- Add sliced mushrooms
- Remove chipotle sausage from casing and crumble
- Add frozen corn
- Season with salt and pepper
Make Tostadas:
- Heat oil in pan
- Fry corn tortillas until crispy
- Drain on paper towels
Assembly:

- Add mushroom-sausage mixture
