Jenners Tofu Scramble with Cauliflower
Instructions
- Press tofu well to remove excess moisture
- Heat olive oil in pan over medium heat
- Add diced shallot, cook until softened
- Add finely chopped cauliflower
- Add minced garlic
- Crumble tofu into pan
Season with:
- Generous amount of turmeric
- Garlic powder
- Small amount of cumin
- Ground coriander
- Salt and pepper
- Coconut aminos
Finish Scramble
- Cook until heated through and lightly browned
- Serve in warm tortillas with toppings
