RECIPE: Sumptuous Garlicky Sweet Potato Mash for a ThanksLIVING Side Dish.

Serves 6 – 8
INGREDIENTS

  • 8 c diced sweet potatoes (Peeled or unpeeled)
  • 6 T vegan butter
  • 2 garlic cloves, minced
  • 2 T nutritional yeast
  • 1 tsp dill
  • 1/2 tsp nutmeg
  • 1/2 tsp sea salt
  • Ground pepper to taste
  • 1/3 c pecans toasted and chopped (optional)

DIRECTIONS

  1. Boil large pot of water and add sweet potatoes. Cook until tender (approx 10 minutes)
  2. Drain sweet potatoes and add back to the pot
  3. Add remaining ingredients (except pecans) and mash with potato masher until smooth.
  4. Top with pecans and serve!
