Owner Krimsey Ramsey has a fascinating back story!  Krimsey.com says, “In 2010, she received her Bachelors degree in Petroleum Engineering from Louisiana State University, and later went on to receive her M.B.A. in Finance from Texas A&M, Corpus Christi.  After working in the oil industry for five years, she began struggling with the ‘why’ behind her work.  Despite a successful career and promising future in the corporate world, she quit in 2015.  She was motivated by the fear of mediocrity–dreading a life of ‘what if’s’ and ‘if only’s.’  In late 2015, she sold nearly all of her belongings, packed the rest into her two-door muscle car, and drove across the country with her dog, Kona.” “Krimsey has been following a plant-based diet since 2007, and she wants to inspire others to take care of themselves, the animals, and the environment through simple diet changes.  Her cookbook, “The Cajun Vegan Cookbook” is now available digitally and in print!”
