Pura Vita’s Panzanella Salad (S+F)

Ingredients

Salad

  • 2 cups Organic Cherry or Grape Tomatoes
  • ¼ cup Basil
  • ¼ cup Red Onion
  • 2 cups Toasted Baguette or Ciabatta

Red Wine Vinaigrette

  • ½ cup Organic Red Wine Vinegar
  • 2 tsp Organic Dijon Mustard
  • 2 Large Garlic Cloves
  • ½ tsp Sea Salt
  • ½ tsp Black Pepper
  • 1 cup Organic Extra Virgin Olive Oil

Instructions

  • Combine tomatoes, toasted bread, basil, and onion in a large bowl.
  • To made vinaigrette, mix all ingredients (except the olive oil) in the blender.
  • While the blender is running on low, slowly pour olive oil into mix to emulsify.
  • Pour vinaigrette over salad mixture and mix.
  • Let the salad sit for at least 15-20 minutes before eating. (The bread should have time to soak up all the dressing.)
  • Serve
