This Tri-Color Vegan Pasta Has a Unique Ingredient

I love a good vegan pasta dish! And this one is super unique. Andrés combined tri-color pasta, black beans, peanuts, and a lot of spices to create an incredible flavor palette that is sure to bring you so much food joy! Tri-Color Black Bean Salad Pasta
Ingredients
- - Store-bought tricolor pasta (mine was mixed with tomatoes and
- 225 grams
- - Black beans 200 grams
- - 100 gr of peanuts
- - 1/2 a red bell pepper
- - Vegan Mayo of choice
- - Handful of parsley
- - 1 onion
- - 1 carrot
- - 3 cloves of garlic
- - Curry powder
- - Cilantro powder
- - Oregano to taste
- - Black pepper to taste
- - Salt to taste
- - Chinese cinnamon to taste
Instructions
- Chop or blend your onions, carrots, and garlic. Also, blitz your peanuts with your pepper alongside a pinch of curry powder and cilantro powder. Mix thoroughly with the pasta and the black beans in a large bowl. Infuse your vegan mayo of choice (quick tip: it's a 1:1 ratio of soy milk and oil in a blender if you want to make it really saucy!) with the parsley and the rest of the spices.
