Jenners Heirloom Tomato Tart

Course: Brunch

Ingredients

  • 1 package vegan puff pastry Whole Foods brand recommended
  • Dijon mustard
  • 4 small onions
  • Olive oil
  • Herbs de Provence
  • Assorted heirloom tomatoes
  • Fresh rosemary
  • Salt and pepper
  • Fresh herbs for topping:
  • Arugula
  • Dill
  • Parsley
  • Arugula flowers optional
  • Pine nuts
  • Instructions

Instructions

  • Defrost puff pastry completely

Caramelize Onions:

  • Quarter onions
  • Cook slowly in olive oil with salt and Herbs de Provence until sweet and caramelized

Prepare Tomatoes:

  • Slice tomatoes
  • Place on paper towels
  • Salt and let drain for 30 minutes

Prepare Crust:

  • Join two pieces of puff pastry
  • Fold edges to create a border
  • Place on floured baking sheet

Assembly:

  • Brush pastry with Dijon mustard
  • Spread caramelized onions as first layer
  • Layer sliced tomatoes, overlapping slightly
  • Drizzle with olive oil
  • Season with salt and pepper
  • Sprinkle with fresh rosemary
  • Bake at 400°F for 35-40 minutes until pastry is golden

Top with:

  • Fresh herbs
  • Arugula
  • Pine nuts
  • Light olive oil drizzle
