Vanilla Berry Chia Pudding – New Day New Chef
Share This
Some recipes are so simple it’s hard to believe how satisfying they can be. Nina Bergman‘s Berry Vanilla Chia Pudding is one of those recipes. Featured during the Challenge the Host segment of New Day New Chef, this easy make-ahead breakfast combines just a handful of ingredients to create a creamy, protein-packed meal that takes minutes to prepare.
The recipe appears in the same episode as award-winning author Christine Sneed’s comforting Vegan Potato Leek Soup. While Christine brings thoughtful storytelling and simple cooking to the kitchen, Nina shows viewers how easy it is to create a nutritious breakfast with almost no effort.
The Overnight Breakfast That Practically Makes Itself
One of the biggest advantages of chia pudding is convenience. As Nina demonstrates on the show, all you need to do is combine chia seeds with soy milk and a splash of vanilla, give it a good shake or stir, and place it in the refrigerator.
While you sleep, the chia seeds absorb the liquid and transform into a creamy pudding-like texture. By morning, breakfast is ready and waiting.
For busy mornings, it’s hard to beat. There’s no cooking, no blender, and no complicated preparation. Just a few minutes of prep the night before and a nutritious breakfast is ready to grab from the refrigerator.
Tiny Seeds With Big Nutrition
During the episode, Nina points out that chia seeds are packed with nutrition. In just a few tablespoons, they provide protein, fiber, healthy fats, and antioxidants.
Despite their tiny size, chia seeds have become a favorite ingredient among athletes, fitness enthusiasts, and anyone looking for simple plant-based foods that provide lasting energy. When soaked in liquid, they create a satisfying texture that helps make this pudding both filling and delicious.
Nina also notes that this recipe contains very little sugar while still tasting naturally sweet, especially when paired with fresh berries and vanilla.
The Perfect Canvas for Fresh Fruit
What makes chia pudding so versatile is how easily it can be customized. For this version, Nina tops the pudding with blackberries, creating a breakfast that’s as beautiful as it is nutritious.
The darker the berries, the higher their antioxidant content tends to be, which is one reason blackberries make such a great addition. Their sweet-tart flavor pairs perfectly with the creamy vanilla pudding underneath.
You can also experiment with other berries, seasonal fruit, nuts, seeds, or granola to create your own variation. Once you learn the basic formula, the possibilities are nearly endless.
Breakfast, Snack, or Dessert
One of the questions that comes up during the episode is whether chia pudding can double as dessert. The answer is a definite YES! Its creamy texture feels indulgent enough for an evening treat while still delivering plenty of nutrition. Nina mentions that she often takes chia pudding on the go, making it a convenient breakfast, afternoon snack, post-workout meal, or healthy dessert option.
That’s part of what makes recipes like this so irresistible. They’re simple enough for everyday life while still feeling like something special.
