VEGAN “LOMO” SALTADO – A STAPLE PERUVIAN DISH
•2 tablespoons Olive Oil or Spray Oil
•1 large red onion, cut into eights or large strips
•1 bag of Gardein Beefless Strips or 2 Portobello mushroom heads
•1 bag of French fries, sweet potato fries or 2 yukon potatoes sliced
•3 tomatoes, cut into eighths
•1 tablespoon cilantro, chopped
•1 tablespoon balsamic vinegar
•2 tablespoons soy sauce
•1⁄2 teaspoon paprika
•1⁄4 teaspoon ground cumin
•Pinch of salt
•Pinch of black pepper
