Authentic Mexican Street Food, Veganized!

Hola amigos! Today we have veganized Mexican Street Food!   Tonia Hicks joins us for an easy recipe of Elotes En Vaso-(Corn in a Cup!). This is similar to a popular corn dish street vendors sell, made with corn, mayo, cheese, and spices.   Tonia is the queen of veganizing any dish, and she does it again today, turning this usually dairy-filled dish, into a plant-based masterpiece with all the same flavors!

We love it when Tonia joins us in the kitchen. Elotes En Vaso- A Taste Of Mexican Street Food

Elotes En Vaso is basically cheese-covered grilled corn with tasty spices.  So it is pretty simple to make vegan by simply using plant-based cheese and mayo instead. And Who wouldn’t want to recreate the delicious magic of Mexican street food!? This is such a delicious side dish and so easy to make.  Tonia used freshly grilled corn on the cob but feel free to use canned or frozen corn. The little additions of spices, lime, and cheese make this creamy dish one you’ll love to eat and serve to friends at a party, or just have for yourself as a snack when hunger strikes.

Elote en Vaso

Elote en Vaso/Corn in a Cup!

An authentic veganized Mexican street food dish everyone will love. It is creamy and cheesy and flavored with the perfect spices!
Course Side Dishes
Cuisine Mexican

Ingredients
  

  • 5 Ears of corn cut off the cob or use 2 drained and rinsed cans of whole kernel corn or 1lb bag of warmed frozen corn.
  • 1/2 C vegan mayo
  • 1/2 tsp salt
  • 1/2 C shredded vegan cheese
  • 1/4 C finely chopped cilantro
  • 1 tsp chili powder in the video Tonia used less but decided to add a bit more!
  • the juice of 1 lime

Instructions
 

  • This is easy to make! Just add all of the ingredients in a bowl and mix! The corn is great if it's still warm (doesn't need to be hot, just warm) and the mayo and cheese can be added cold. This ends up making the dish room temperature. It is also tasty cold so if you store leftovers in the fridge that's fine to eat as is.
