Part 1 of 2  – Please make sure any cheeses you use are 100% vegan. The Trader Joe’s cheese alternative shown in the video actually turned out to have a trace of milk. Our apologies.
Holy CATaroni with Vegan Cheesy Holypeños
INGREDIENTS
1 lb (16 oz)  tricolored elbow Cataroni (macaroni)
1/4 c  vegan butter such as Miyokos Creamery
3 c   unsweetened rice, almond or soy milk
1/3 c  flour
1/2 c  nutritional yeast
2 Tbsp tomato paste
1 tsp  garlic powder
1 tsp sea salt
1 Tbsp fresh lemon juice
1 Tbsp agave
6 oz slice jalapeños (Hollypeños)
2 Tbsp  vegan bread crumbs
DIRECTIONS

  1. Pre-heat oven to 350 degrees F
  2. Bring salted water to a boil and cook pasta according to package directions, drain
  3. Melt butter in sauce pan and whisk in flour until it forms a roux (paste)
  4. Slowly pour non dairy milk into the roux and whisk until fully mixed together
  5. Then add nutritional yeast, tomato paste, garlic powder & salt,
  6. Add lemon and agave to sauce pan, bring to a boil and lower heat and simmer for 3 minutes
  7. Place in a baking dish and stir in the jalapeños and add bread crumbs to the top
  8. Bake for 30 min at 350 degrees or until golden brown.
