Holy CATaroni with Vegan Cheesy Holypeños
INGREDIENTS
1 lb (16 oz) tricolored elbow Cataroni (macaroni)
1/4 c vegan butter such as Miyokos Creamery
3 c unsweetened rice, almond or soy milk
1/3 c flour
1/2 c nutritional yeast
2 Tbsp tomato paste
1 tsp garlic powder
1 tsp sea salt
1 Tbsp fresh lemon juice
1 Tbsp agave
6 oz slice jalapeños (Hollypeños)
2 Tbsp vegan bread crumbs
DIRECTIONS
- Pre-heat oven to 350 degrees F
- Bring salted water to a boil and cook pasta according to package directions, drain
- Melt butter in sauce pan and whisk in flour until it forms a roux (paste)
- Slowly pour non dairy milk into the roux and whisk until fully mixed together
- Then add nutritional yeast, tomato paste, garlic powder & salt,
- Add lemon and agave to sauce pan, bring to a boil and lower heat and simmer for 3 minutes
- Place in a baking dish and stir in the jalapeños and add bread crumbs to the top
- Bake for 30 min at 350 degrees or until golden brown.
