Jackfruit Tacos: Everyone's New Obsession

RECIPE:  Jackfruit Tacos: Everyone’s New Obsession

Use pre-packaged Tex mex jackfruit (or chili lime flavor) from Uptons Naturals or The Jackfruit Company
INGREDIENTS

  • Corn tortillas
  • Avocado, ripe
  • Lettuce of your choice
  • Cherry tomatoes
  • Shredded vegan cheese
  • Salsa (I like super spicy)

DIRECTIONS

  1. Pre-heat oven to 350
  2. Place corn tortillas in oven to crisp a bit
  3. (About 6-10 minutes but watch closely ovens vary)
  4. Take out and shape into taco form let cool a few minutes to hold the shape.
  5. Stuff your taco shells with jackfruit
  6. Avocado, tomatoes, (vegan cheese optional), lettuce, salsa. (Or whatever you want to use as taco fillers!)

Air Fried Zucchini Strips

INGREDIENTS

  • slice zucchini into 3 inch strips that are approximately 1/3 inch thick
  • very, very lightly spray with oil
  • very lightly sprinkle each side with sea salt

DIRECTIONS

  1. Place the sliced zucchini into an “air fryer” and cook for 20 minutes at 390 deg F

We prepared these zucchini strips as a side dish before the show; thus did not demonstrate how to make these delicious strips.
We used a Toshiba air fryer to fry with virtually no oil
