Spectacular Soy Chorizo Tacos

Taco Tuesday on #LunchBreakLIVE featuring Vegan B Boy, Timothy J Deguzman‘s Spectacular Soy Chorizo Tacos.
RECIPE:Â Spectacular Soy Chorizo Tacos
INGREDIENTS
- 8 oz soy chorizo (we used El Burrito)
- 2 – 3 garlic cloves, pressed and minced
- 1/2 medium red onion, diced
- 4 – 5 crimini mushrooms, sliced
- 1 tbsp vegetable oil
- 1 golden potato, steamed until almost done and cubed
- 4 organic spouted corn tortillas (we used Food or Life)
- 4 tbsp kimchi (we used Firefly Kitchens)
- 1/4 c vegan cheese (we used Follow Your Heart Vegan Gourmet Shreds)
- 1 tsp hot sauce (we used Yellowbird Sauce Jalapeño Condiment
DIRECTIONS
- Sauce red onions with garlic till soft
- Add mushrooms and continue sautéing until tender
- Remove sauce and set aside
- Then sauté soy chorizo and add the potato, cooking together until potato is fork tender
- Remove from heat and set aside
- Heat tortillas directly on the flame until softened
- Assemble placing the soy chorizo/potato mix on the tortilla
- Next layer with the mushrooms, onions and garlic
- Add a small handful of the shredded cheese
- Top with a tbsp of kimchi on top
- Finally add hot sauce as desired and enjoy!
