Vegetable Spring Rolls in Brown Rice Paper Wraps

RECIPE: Shayda’s Vegetable Spring Rolls in Brown Rice Paper
(Oil-free in the Breville Air Fryer)
INGREDIENTS
- 1 lg red onion, sliced
- 10 cloves of garlic, chopped
- 2 inch piece of ginger, minced
- 1 shallot, chopped
- 10 oz bag of “Cruciferous Crunch” from Trader Joe’s (shredded cruciferous vegetables)
- 1 bag of shredded red & green cabbage from Trader Joe’s
- 10 oz bag sliced mushrooms
- 2 sweet red bell peppers, sliced
- 1 bag shredded carrots, Trader Joe’s
- 1 bag of bean sprouts
- 1 T raw coconut aminos, (to taste)
- Brown rice paper wraps
DIRECTIONS
- In a large pan, sauté onion, bell peppers, carrots & mushrooms on low.
- Once the onion becomes translucent, add garlic, shallots and ginger. Keep mixing to allow the flavors to blend together.
- Add the cabbage – when this is cooked:
- Add the cruciferous crunch – when this is cooked:
- Add the bean sprouts.
- This will take some time, but it will all cook down. No need to add water to your pan.
- Add the coconut aminos and mix really well.
- Once everything has cooked down, let it cool completely! You do not want to mixture to be hot when you’re rolling it in the brown rice paper.
- Place a single sheet of the brown rice paper in warm water, take out and put on a clean surface.
- Place a tablespoon or more of the mixture onto the rice paper. Roll tightly half way, tuck on the left and right corners and continue rolling.
- It’s actually really easy.
Place in the air fryer at 400 F for 20 min. We used a Breville Air Fryer
