RECIPE: Brian’s: Easy, Nutritious Meal for Under Three Dollars

INGREDIENTS

  • 1 c uncooked brown rice
  • 16 oz pkg frozen peas  (Trader Joe’s)
  • 15 oz can dark red kidney beans, washed and drained (Sprouts)
  • 1 T soy sauce, to taste

DIRECTIONS

  1. Cook the brown rice according to package directions
  2. Heat the frozen peas and kidney beans in a saucepan with 1/2 c water until they are heated through
  3. Drain the water from the saucepan with the peas and kidney beans
  4. Gently fold the peas and kidney beans into the rice
  5. Season with soy sauce to taste
  6. Enjoy!
