Vegan Mashed Potatoes, Gravy & Stuffing!

Gravy
Boil 2 Russet sized Potatoes (or 1 Person)
Boil 2 baby Purple Potato’s
(optional)
Boil 1 carrot
Boil 1/4 Chopped Red Onion (optional)
Boil for 10 mins covered or until soft uncovered
Then:
1/2 Cup of raw Cashews
1/4 Cup of Nutritional Yeast
1 1/4 tsp of garlic powder
1 tsp of Onion powder
1 tsp of crushed red pepper
1 Cup of boiling water
1 Tbsp of Vegan butter (earth balance
1/2 Cup of vegetable broth
Blend on for 20-30 seconds
Mashed Potatoes
Boil 2 Russet sized Potatoes (per person) until soft.
Boil 2 baby purple potatoes until soft.
Strain and put back in pan, then mash.
Add 1 Cup of veggie broth
1 tbsp of vegan butter
Add one 1/2 Cup of almond milk (optional)
1 tsp of Garlic powder or to tastes
1 tsp of Onion powder tastes
1 tbsp of Bragg’s organic sprinkle or Italian season/all purpose seasoning
Holiday Stuffing
Sauté one 1 1/4 Red Onion in 2 cups of veggie broth in a pan over medium heat
Add 1 bag of Olivia’s Traditional vegan Stuffing
Add 2 more cups of veggie broth and stir occasionally for 10 minutes or until desired softness and taste.
