Glorious Gazpacho Soup Made Easy!

Gazpacho Soup
 Ingredients:
5 medium fresh tomatoes cut in halves
1 large cucumber, peeled
1/2 of a red bell pepper, cored and seeded       Â
1/4 of a medium red onion
1 cloves garlic
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
1/4 cup extra-virgin olive oil
2 tablespoon Sherry Vinegar
Fresh ground black pepper to taste
Embellishments:
1 avocado sliced
1/2 cup basil leaves finely choppedÂ
Add all ingredients together in a vitamix or blender. Puree until smooth. Cover and chill in refrigerator for 2 hours. When serving add basil and avocado to top. Also optional to add chopped tomatoes and/or chopped onions to add texture. Sprinkle with olive oil as last step.
3 cups = 1 serving
