Mashed Chickpea Salad!
Place one 15 oz can of rinsed chickpeas in large bowl and mash thoroughly with a potato masher or fork. Add the remaining ingredients below and mix/mash. For creamier consistency add more hummus or tahini.
Half a cup of celery sliced
Half a cup of carrots diced
1/3 cup scallion sliced.
Add 1/4 or more hummus or tahini
Add one to two tablespoons of stone ground or Dijon mustard
A dash of garlic powder
A half a teaspoon ground cumin
Sea salt and freshly ground pepper to taste.
Juice of one lemon.
A dash of paprika as a garnish.
Serve with pita chips, over a bed of lettuce or as a sandwich!
